Later, through a process we call Still Ageing we steep the fruit, slowly and deliberately, for 5 years in specially designed storage tanks that protect against external influences such as light, temperature, and air. By aging for extra years, CHOYA Utage is able to obtain its rich flavors with elegant aroma and tartness that fills your mouth.
